Summer Slaw

For the Dressing:

4 tb olive oil
2 tb sour cream (or, substitute plain Greek yogurt)
3 tsp honey
2 tsp hot sauce (or more if you like spicy things)
1/4 cup finely minced fresh cilantro leaves
Juice from 1 ripe lime (1 large or 2 small)
1/4 tsp sea salt + 1/2 tsp pepper

For the Slaw:

4 cups shredded cabbage
1 bell pepper, any color, chopped
1 avocado, cubed
1 ear corn, grilled, kernels sliced off
a few cilantro leaves,to garnish

First, make the dressing. Add all ingredients in a blender and mix til combined. Set aside.

Add cabbage, peppers, corn, and avocado to a large bowl. Toss slaw with dressing. Sprinkle with extra cilantro to garnish.
