Red Kuri Squash Boats

These kuri squash boats are fun, flavorful, and packed with nutrients. If you’ve never seen one but happened upon one in your bag this week, get excited! These things are delicious, and with this recipe, you can make them into fun and healthy meals for you and your family.

A little background if you’ve never heard of kuri squash: a cup of this squash contains only about 60 calories, but accounts for more than 25 percent of your daily recommended Vitamin C. You also get 2 grams of fiber in each cup of kuri squash. It has a sweet, almosy chestnut-like flavor to it. Using it would be a great way to change things up with a recipe you use that calls for butternut or acorn squash, or even if you want a lower-carb substitute for a sweet potato.

So what do you do with this funny-shaped squash that I promise tastes delicious? Make it in to boats, of course!

Start by halving and seeding your squash.  Look at that beautiful color!

Then slice it into “boats” and place on a prepared baking sheet. I sprinkled them with salt after giving them a quick spray of coconut oil.

Roast them for 15-20 minutes on each side, then you are ready to fill them!

I found lentils with lemon juice, salt and pepper, scallions, goat cheese, and pomegranate seeds made for a perfect complement to the sweet squash.

Red Kuri Squash Boats

Instructions

  • Halve and seed your squash, then slice into boats. I found that each half gave me 3 boats.
  • Spray with olive or coconut oil, add salt and pepper to season, and then arrange on the baking sheet.
  • Bake at 425 degrees for 15-20 minutes on each side. I flipped them after 15 minutes, then gave them another 20 minutes.
  • When they are fork tender and slightly golden, they are done! Take them out of the oven, fill with your filling of choice, and enjoy!
  • *For this particular filling, I used 1 cup of cooked lentils, 2 scallions, 1 Tbsp. of lemon juice, ¼ tsp. salt, and I mixed them together. Top with goat cheese and pomegranates, and enjoy!
