Why grill fruit?

There are very few foods that don’t benefit from time spent on the grill —you’ve done grilled pizza, grilled corn— fruit is no exception. The high heat caramelizes the sugars and lends a slight char that transforms your fruit into something truly decadant. Whether you’re looking for a sweet-savory main course complement or a summer-perfect dessert, grilled fruit fits the bill. Which fruits are best for the grill?

Grilled Watermelon Wedges

  • Peaches, Plums, Pluots, Nectarines, Mangos, and other stone fruit
    → Cut in half, remove stone, grill halves
  • Cherries, Strawberries, Blueberries
    → Remove pits from cherries, hull strawberries. For smaller pieces such as berries, use a grill basket.
  • Bananas
    → Keep peel on and slice lengthwise. Place cut side down, on the grill.
  • Lemons, Limes, Oranges, and other citrus
    → Cut into rounds; grill both sides.
  • Apples, Pears, Pineapple
    → Cut into rounds; grill both sides.
  • Watermelon, Cantaloupe, Honeydew
    → Cut into wedges; grill both sides.

→ Another option for preparing fruit to grill is to cut pieces into chunks and thread on a skewer.

Whichever fruit you decide to grill, you’ll want to choose pieces are are slightly under ripe. A firmer piece of fruit will hold together better, when it starts to soften from the heat. The carmelization of the sugars will provide plenty of sweetness. Be sure to leave the skin on; this will help your piece of fruit hold its shape.

How do I grill my fruit?

  • You’re going to want to clean your grill before grilling fruit; you don’t want any lingering food particles to taint your sweet fruit. Preheat the grill, heating it to medium-high heat (between 350–450F) for about 10–15 minutes.
  • Once you’ve picked out which fruit you’re going to grill, clean it and cut it into appropriate pieces: hunks, slices, wheels, etc. Rub your fruit in a neutral-tasting oil that’s suitable for high heat (such as safflower or grapeseed oil.)
  • Optional, but we like to sprinkle fruit with sugar. It helps keep the rinds from sticking to the grill and produces a decadent caramelized finish. Sprinkle sugar (or alternate spice, such as cinnamon) on the cut sides of your fruit before placing it on the grill.
  • Depending on what fruit you’re grilling, you would either place pieces directly on the grill (to get lovely grill marks) or in a grill basket. Let your piecees sit for a few minutes before checking for grill marks. It may stick a little; just be mindful of your delicate pieces when flipping. Give it around 3–5 minutes for perfect grilled doneness.
  • Serve immediately.
